Great Website, Jack! I'll visit often. Just moved to Lafayette from Houma. Not being from cajun parents, I ate alot of "redneck vittles"...LOL. However, I remember my mom making left over potato patties with mash potatoes. Something I do every now and then if I remember. Adding shrimp and other seasonings is tasty, too. But one of the treats with breakfast was maple syrup and pats of butter mashed up in a saucer for our dipping our drop biscuits in. Why don't I do that anymore? Gotta go make some drop biscuits, Jack...See Ya!
